Mike Welser's book "Reichswehr and Wehrmacht Bayonets 1920-1945" provides a general list of rarity rankings. Although it's not all-inclusive, it can get you started. The book is relatively inexpensive and available directly from Mike. PM me if you want his mailing address. To delve further into the subject, George Wheeler's book is a must - "Seitengewehr: History of the German Bayonet 1919-1945".
