I'm sure there are a lot of accounts and books from both sides about the combats around Carentan.
One of the main sources is certainly Friedrich von der Heydte who lead FJR6. I own a copy of his (late) memoires "Muss ich sterben..."
He gave an account of the fights in 1948 to the US Army.
It is now manuscript B-839 (B-series) of the Foreign Military Studies, the doc is 90 pages long, the report itself 45 pages long (bilingual). It can be found on the FTP site here:

Hello everybody, I present to you this M38 of the FJR6 named and identified. Obergefreiter Heribert SOUREN 12 kp/FJR6 wounded on June 6, 1944. Left for dead by his unit. He was treated and taken prisoner by the Americans. He died in July 1993.
